Chicken wings with pearl barley (giouvetsi)

For 4 portions

  • 1 packet wings from fresh organic chicken BIOGRECO
  • 1 packet of pearl barley (500 gr.)
  • 1 small dry finely chopped onion
  • 2 cloves grated garlic
  • 500 gr. ripe grated tomatoes
  • 2 tablespoons tomato paste
  • ½ cup (125 ml) of white wine
  • 1 cup grated kefalograviera (hard table cheese)
  • Olive oil
  • Salt, pepper

Directions:

In a pot put 5-6 spoonfuls olive oil and sauté the onion, the garlic and the wings for a few minutes in high heat. Add the wine, wait for 2-3 minutes and then add the tomatoes, the tomato paste and 2 cups of water. Season and cook the wings in low heat for about 1 hour.

Empty the wings with their sauce in a cocotte or a deep roasting tray; add 1 ½ litres boiling water and then the pearl barley. Mix and cook it in preheated oven for 200o C for 20 minutes. Serve with kefalograviera.
